Iâl Bakery, nestled within Iâl Restaurant at Coleg Cambria in Wrexham, offers freshly baked goods crafted by Lead Baker & Patisserie Chef Naomi Griffiths and Baker & Patisserie Chef Ella Muddiman.

Both Naomi and Ella were finalists in the 2025 Wales Food and Drink Awards, recognising their dedication and talent within the baking industry.

The bakers create a wide range of products including sourdough, focaccia, ciabatta, baps, bloomers, traybakes, cookies, afternoon tea treats and much more.

Naomi and Ella are also working on a new collaborative project for UK colleges, partnering with BAKO and Wrights Bakery to develop new bakery products while supporting skills development across the sector.

As part of their roles at Coleg Cambria, they enjoy working closely with learners, helping to inspire and support the next generation of bakers entering this exciting industry.

Iâl Bakery is committed to sustainability and quality, sourcing ingredients locally and supporting the Welsh and European Farm to Fork strategy.

We have been buying our sourdough loaves from Ial Bakery for 18 months now and they are perfect for our cafe which specialises in grilled cheese sandwiches and Welsh rarebit.
